Homemade baked donuts… I never knew how much fun they could be to make, how delicious they would be, and how much less guilty I feel eating them!! I found a recipe on Pinterest for Baked Coconut Donuts from a great blog ‘Taste and Tell’… where I learned about the existence of donut pans!!! I’m a little embarrassed I didn’t realize this before… but now I have them, and they are SO MUCH FUN. Too much perhaps… too many donuts, even baked…. we shall see. So since the amazingly delicious coconut donuts… we have made this also amazing Baked Chocolate Donuts… here is the recipe I cobbled together from a number of recipes to create the king of all donuts…
And for my great friend, who enjoys gluten-free… here you go - Baked Chocolate Gluten-Free Donuts
Chocolate Donuts
1 cup all purpose flour
2 tablespoons cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup sugar
1/2 teaspoon freshly ground nutmeg
1/2 teaspoon salt
2 tablespoons butter (melted)
1/4 cup buttermilk
1/4 cup plain yogurt or sour cream(2%, not low-fat)
1 teaspoon vanilla extract
1 large egg
Mix first 7 ingredients in a bowl, flour through salt. In a separate bowl, combine wet ingredients (next 5 ingredients) and stir with a whisk. Add wet ingredients to dry ingredients, and stir until just combined. Pour ingredients into a large ziploc bag, and cut the end off one corner – you will use this to pipe the batter into your greased donut pans. Bake at 350 for 5-6 minutes. Once cool, dip the donuts in the chocolate glaze, and then into a bowl of sprinkles.
Chocolate Glaze
In a glass bowl in the microwave, combine and melt, stirring often:
- 1/2 cup milk chocolate chips
- 2 tablespoons butter
- 1 tablespoon corn syrup
- 1/2 teaspoon vanilla extract
